Amomum Subulatum
A highly sought after spice used in Indian and Vietnamese cuisines, it is used to add flavor to all sorts of foods, including breads, coffee and tea.
The non-fully ripe green pods, referred to as true cardamom, are said to taste like a cross between eucalyptus, meant meant, and pepper.
The fully dried pods are sweeter and taste, more like cinnamon, nutmeg, coriander, and allspice.
A highly sought after and an expensive spice, with a long history of medicinal use.
Cardamom is naturally found as an understory plant where it grows in partial shade. It grows 60 inches tall.
Perennial zones 9-13, can be grown in any zone as an annual or brought in and protected from frost.
The best time to start these in colder climates is in winter, indoors, and then move them outside where they will bloom in summer, and then produce pods.
These can be started anytime of year in zones 9-12 when temperatures are between 77 and 86 degrees. Thrives in humid climates.
