Heirloom Spaghetti Squash.
Spaghetti squash is called a winter squash because that is when it is ready (more like fall) Plant in summer for a fall/winter harvest.
Many of you may have passed up spaghetti squash in the store, not really knowing what to do with it as far as a recipe, (this used to be me anyway.) Until I discovered a recipe for pizza spaghetti squash boats!
You simply cut the squash in half, lengthwise, coat in olive oil and bake them face down. Then you take a fork and scrape the inside of the squash. It is so tender and the result is this truly healthy spaghetti. Then I fill with tomato sauce and top with mozzarella and pepperoni. My kids go absolutely nuts for it and ask me to make it all the time. I am always looking for ways to squeeze vegetables in. You can also use it like you would regular spaghetti and just top with sauce. It tastes amazing all by itself too, with a little olive oil, salt and black pepper.
