Amaranth, like quinoa, is an ancient grain. Highly nutritious and provides an abundance of crop with both grains and leaves.
Flower heads protrude you to 1 foot long on 3-5 foot stalks.
Great for hot climates but does well in cooler climates as well. These are highly resistant to heat, drought and humidity. Very easy to grow
These are not only an excellent and abundant food source, but the flower heads are enormous and impossible to not notice!
The grains can be prepared like barley or buckwheat and used in soups.
Amaranth is very high in protein, also manganese, phosphorus, magnesium, iron, zinc, vitamin B6, vitamin B5, and folate.
Will even grow in summer in Florida, Arizona, California, Texas and Louisiana, grows just fine in cooler climates too. Not a picky plant.
