These used to be more widely available in grocery stores. Today, you are very lucky to get your hands on any. People love them for their flavor and ability to hold their shape when cooked. They don't turn to mush when used in soups or chili, plus they are so pretty. In my attempt to satisfy my addiction to these, I decided to grow them and boy are they abundant! We dry them here (obviously for seed keeping,) but we also save a lot for our own enjoyment.
The Orca Bean, also known as the Yin Yang Bean or Calypso Bean, has a rich history rooted in ancient agriculture. It is believed to have been domesticated thousands of years ago in South and Central America, where early civilizations cultivated beans as a staple crop. Indigenous peoples of North America also grew beans, often alongside corn and squash in the traditional Three Sisters planting method.
The Orca Bean gets its name from its striking black and white pattern, which resembles an orca whale. It is also called the Yin Yang Bean because of its balanced two-tone appearance, reminiscent of the Taoist symbol, and the Calypso Bean, possibly a reference to the sea or its bold contrast.
Today, Orca Beans are grown in various regions of the Americas and parts of Europe. They are prized for their creamy texture, mild nutty flavor, and ability to hold their shape when cooked.
