Peppers start out green and mature to yellow, then orange, then red. They can be picked at any stage for different levels of heat, with red being the hottest as the capsicum is allowed to become more concentrated as the pepper matures.
You can make your own tabasco sauce or enjoy them in dishes or raw if you are one of "those," (like me!)
