The bloom stages of this plant are nothing short of fascinating. It begins as a tightly packed sphere, as if ready to burst open at any moment. The buds first resemble tiny clusters of green broccoli before stretching skyward, unfurling into elegant shades of pink and purple as they finally break free. Just stunning blooms.

A tall, aromatic herb valued for its complex flavor and fragrance, Angelica archangelica is a staple in herbal and culinary gardens. Its stems, seeds, and roots are all used, each offering a distinct, spicy-sweet scent reminiscent of juniper, celery, and citrus. It has a long history in Iceland, where the plant was used to treat the plague, among many other ailments. It is still widely valued as a medicinal plant and can be found all over the country. It has been planted en masse intentionally as it is used in so many concoctions.

The stems can be candied for desserts, used fresh in fruit preserves, or added to liqueurs and gin as a botanical note. The seeds and roots lend depth to bitters, aperitifs, and herbal teas, while the fragrant umbels attract pollinators and beneficial insects.

A biennial plant, Angelica forms lush green foliage in its first year and produces large, domed clusters of pale green flowers in the second. It prefers cool, moist soil and partial sun and often reseeds naturally when happy.

Seeds can be sown in fall for a sowing emergence or cold-moist stratified (I provide instructions on how to do this) in your refrigerator for 90 days. However, these seeds have been cold-dry stratified and MIGHT come up without cold stratification. If you want to try to sow immediately, please only try a couple of seeds.
