LAGENARIA SICERARIA
This is an annual vine that grows fast in summer heat and can reach 15 to 30 feet, so give it a sturdy trellis, fence or arbor. The pale green fruits hang straight down and can grow 3 feet or longer. For the best flavor, harvest them young, at about 12 to 18 inches, while the skin is still tender and the flesh is mild, a little sweet and more delicate than zucchini. Slice it into soups, sauté it, stuff it, or bake it into casseroles. In Sicily the young leaves and shoots, called tenerumi, are also cooked and eaten.
The white flowers open in the evening and attract moths and bees. One vine produces heavily, so you may only need a plant or two.
Growing tips: Soak seeds in warm water for 24 hours before planting. Sow after the last frost, when the soil is at least 70°F, about 1 inch deep. Space plants 3 to 4 feet apart in full sun. Seeds sprout in 7 to 14 days. Keep the plants evenly watered, and pick often to keep them producing.
