A stunning ornamental and edible corn variety producing deep purple to violet kernels that practically glow against their husks. Ultra Violet corn is as beautiful in the garden as it is on the table, making it a showstopper in both the field and as dried decorative ears.
Plants grow 5 to 7 feet tall with strong stalks and produce medium sized ears packed with richly colored kernels ranging from deep purple to blue violet. The striking color comes from natural anthocyanins, the same antioxidant pigments found in blueberries and purple cabbage. Grind into a stunning blue-purple flour for colorful tortillas, cornbread, pancakes and baked goods that are as beautiful as they are delicious. Flavor is sweet and tender when harvested at the milk stage, with a slightly earthier and nuttier profile than standard yellow corn.
Direct sow after last frost when soil temperature reaches at least 60 degrees Fahrenheit. Plant in blocks of at least 4 rows rather than single rows for best pollination. Space seeds 8 to 10 inches apart in rows 24 to 36 inches apart. Full sun required. Matures in approximately 70 to 80 days.
